Favorite Ingredient Friday: Watercress Salad!
Watercress is absolutely delicious and can be prepared in so many ways such as in soups, stir fries, or sandwiches. Our favorite way to get our fill of watercress is through a refreshing salad. Below is a recipe for our delicious Summer Watercress Nectarine Salad. This salad is a nice light mix between sweet and peppery, that’s positively delicious to enjoy during the summer months (or whenever the heck you want! 😉 )
RECIPE: Summer Watercress Nectarine Salad
- 4 cups watercress
- ¼ cup sliced onion
- 1 large nectarine
- 2 small cucumbers
- ¼ cup olive oil
- 1 tbsp honey
- ¼ cup water
- ¼ tsp dried sage
- ¼ tsp curry powder
- ¼ tsp chili powder
- ¼ tsp salt
- ¼ tsp pepper
- In a large bowl place fresh washed watercress and set aside
- Chop nectarine into bite size chunks. Slice cucumbers lengthwise. Add cucumber, nectarine, and onion to watercress.
- In a small bowl add olive oil, honey, water, and spices. Mix ingredients rapidly until well combined.
- Drizzle dressing over watercress and gently toss salad ingredients together. Enjoy your fresh summer salad!
