Favorite Ingredient Friday: Sweet Potato Pancakes

For a yummy and satisfying breakfast, try these sweet potato pancakes! The rich flavor of sweet potatoes is a great way to spice up any ol’ pancake recipe! Don’t just take my word for it…try the recipe!


You’ll need:

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 4 teaspoons baking powder
  • 2 tablespoons brown sugar
  • 2 tablespoons cinnamon
  • 2 teaspoons nutmeg
  • 2 cups coconut milk
  • 4 teaspoons coconut oil
  • 2 eggs
  • 1 can sweet potato

Mix all of the ingredients together in a large bowl. Feel free to use a fresh sweet potato in place of the canned version. I tend to add more than the designated amount of spices for more flavor.

Cook, serve and enjoy!
