Gingerbread men are the ultimate holiday cookie. With their sweet, spicy flavor, gingerbread cookies are hard to resist. The sweet aroma will fill your home with the comforting scent of the holidays. Not only are they scrumptious, but these gingerbread men are the perfect holiday gift for friends, neighbors or even just for you! This recipe is all you’ll need to make the perfect gingerbread men. Ready to get started?
- 2 ¼ cup flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground ginger
- 2 teaspoon ground cinnamon
- 1/4 teaspoon all spice
- 1/4 teaspoon cloves
- 1/2 cup packed brown sugar
- 1/2 cup coconut oil, softened
- 5 tablespoons molasses
- 1 egg
- 1 cup powdered sugar
- 5-6 tablespoon water
*Makes ~33 cookies
Start by mixing the flour, baking soda, baking powder, salt, and spices in a small bowl. In a separate bowl, combine the brown sugar, coconut oil and molasses. Beat in the egg.
QUICK TIP: If you don’t have any brown sugar on hand, make your own by mixing white sugar and molasses.
Combine the flour mixture and the sugar mixture. Don’t panic if your dough looks like pebbles. This is the coconut oil being coconut oil! To help the mixture combine, I added about 2 additional tablespoons of molasses.
FUN FACT: Coconut oil is a fantastic replacement for butter. Unlike butter, coconut oil can actually improve your cholesterol level and is full of wonderful antioxidants for the body!
Once your mixture is looking just plain fabulous, whip out your rolling pin and cling wrap. Place the dough on the cling wrap and roll it into a small circle (about 6 inches). Wrap the dough in the cling wrap and refrigerate for about 1 hour. Ah, I know! THE ANTICIPATION!!
FUN FACT: Refrigerating most types of cookie dough is a great way to enhance the flavor and texture. Refrigerated dough prevents the
butter coconut oil in the batter from melting. In other words: HOT OVEN + MELTED BUTTER + COOKIE DOUGH= MELTED, FLAT, SHEET-LIKE COOKIES.
After an hour or so has passed, remove the dough from the cling wrap. Place the dough on a floured surface and begin to roll the dough flat. Depending on your preference, you can make the dough as thick or as thin as you’d like. I chose to have my dough be about 1 cm thick.
Using your gingerbread man and/or woman cookie cutter, cut the dough to form about 33 or so cookies.
little brown angels gingerbread men are done baking, allow them to cool for about 10 minutes before frosting. There is nothing worse than melted frosting.
Now comes the fun part, making the frosting! This recipe is super easy and only requires 2 ingredients: powdered sugar and water. Mix the sugar and water until it forms the consistency of greek yogurt.
Using a piping bag, pipe the frosting onto the gingerbread men to form your favorite designs. I chose a few bow ties and buttons!
QUICK TIP: Create your own piping bag by cutting a very small corner out of a Ziploc bag. Fill the bag with your desired frosting and pipe away!
