Not all fall recipes need to be made in the oven–in fact, a lot of yummy fall treats can be made right on the stove! One of my stove-top favorites happens to be the sweet and savory Apple Crisp! This healthy, no-bake version of the recipe has no need for butter or sugar and even contains the nutritious skin of the apple! This recipe is easy to make and only takes about 30 minutes! Who needs an oven??
- 2 large Apples (yields about 3 cups of chopped apples)
- 2 teaspoons All Spice
- 1 teaspoon Nutmeg
- 1 tablespoon Cinnamon
- 1 tablespoon Honey
- 1 tablespoon Lemon Juice
- 3 tablespoons Coconut Oil
- 1 ½ cups Oats (Instant or Rolled)
- 1 tablespoons Coconut Oil
- 2 tablespoons Honey
- ¼ teaspoon All Spice
- Few shakes of Nutmeg
*Makes 4-5 servings depending on serving size
Start by chopping the 2 large apples. Don’t worry about the sizing: it’s nice to have a variety of sizes and textures. I even prefer to use different kinds of apples to create an interesting flavor.
In a large saucepan, melt 3 tablespoons of coconut oil (side note—coconut oil melts very fast!). Carefully add the chopped apples into the melted oil.
While stirring the sauté, add in the fresh lemon juice and honey. Mix in the All Spice, Nutmeg, and Cinnamon. Allow the apples to soak up all those fabulous juices for about 10 minutes. Move the saucepan to low heat.
In a separate skillet or saucepan, melt the coconut oil. Add in the oats and honey. Continue to stir the mixture to prevent the oats from burning.
For extra flavor add in All Spice and Nutmeg. Allow the mixture to brown for about 10 minutes while continuing to toss and flip the oats. (Don’t mind my change of pans in the photo!)
Once the oat mixture has browned, remove from heat. Serve the apple crisp by topping the sautéed apples with the oats.
Peace, Love & Coconuts!
